Chocolate Cake

Had a fun day baking chocolate cake for my kids. Started off late (around 4+ in the evening), and it dragged until dinner time. With the preparation and baking and cooling down, we had a late dinner with my parents. Anyway, watching the anticipation on my girls’ face made me feel wonderful.

This chocolate cake recipe was given by my MIL. Though not perfect, at least it turned out quite good, with praises all around (hehe)…

Here’s the recipe:

Ingredients:

  • 250g melted butter
  • 250g sifted plain flour
  • 250g sugar
  • 1 tsp vanilla essence
  • 2 tsp sifted baking powder
  • 6 eggs
  • 100g cooking chocolate
  • 100g roasted cashew nuts (can put in other types of nuts)

Method:

  1. Pre-heat oven to 200°C.
  2. Grease and line the base of a round pan.
  3. Place cooking chocolate in a bowl, over a pan of simmering water. Allow to melt. Remove the bowl and set aside to cool.
  4. Beat sugar and butter until creamy.
  5. Put in the eggs one at a time into the sugar and butter mixture.
  6. Mix them well.
  7. Sift the flour and baking powder (again) into the above mixture.
  8. Pour in the cooking chocolate.
  9. Place the cashew nuts at the bottom of the pan.
  10. Pour the cake mixture into the pan.
  11. To make it more interesting, put the cashew nuts at the top of the cake.
  12. Bake it for 1 hour 20 minutes at 190°C, or until cooked through when tested with a skewer.
  13. Cool the cake for about 10 – 15 minutes.
